    Cheddar Potato Chowder

    Ingredients
    2 cups water     2 cups red unpeeled potatoes     1 cup diced carrots
    ½ cup celery     ¼ cup chopped onion     1 teaspoon salt
    1 teaspoon pepper     ¼ cup all purpose flour     2 cups whole milk
    2 cups shredded cheddar cheese     1 cup So Soya/meat     ¾ cup salsa

    Directions
    1. In a dutch oven combine water, all vegetables - pepper, boil and simmer 10-12minutes
    2. Place milk in large sauce pan, gradually add milk, cook for 2 minutes or until thick, add cheese until melted
    3. Add SoSoya or meat and cheese mixture to vegetable mixture.
    4. Add salsa and stir

    Vegetable Bean Barley Soup

    Ingredients
    1 onion chopped, 1 garlic clove, ½ teaspoon basil, 2 tablespoons oil
    2 14oz cans water/broth, 1 ¾ cups water, 1 cup chopped carrots
    ½ cup barley, 2 small zucchini sliced, 1 can cannellini or any white beans
    ¼ teaspoon pepper, ½ teaspoon salt, 1 teaspoon cider vinegar
    1 can diced tomatoes

    Directions
    1. In a Dutch oven sauté garlic, onion and basil in oil, until onion is tender
    2. Add water/broth, carrots and barley, bring to a boil, reduce heat, cover and simmer for 30 minutes
    3. Add zucchini, beans, salt and pepper, cover and simmer 10-15 minutes or until barley is tender
    4. Add tomatoes and vinegar, warm and serve
